Fresh Cavatelli with Spicy Sausage Ragu, Harissa Chicken Greens Bowl, our Steel-Cut Coconut Oats with Champagne Mango & Palm Sugar

Something for your mornings: I have a great steel-cut oat recipe that's a staple in my home. I make a big batch once at the beginning of the week and enjoy it all week long. I mix up what I put in there, depending on the season and what's in my fridge. Lately, with all the beautiful champagne mangos around, I've been doing it with coconut milk (instead of milk) and vanilla bean and then finishing it with some diced champagne mango, and a few shavings of palm sugar. I thought I'd share it with you and see if you like it, too. What I like most about this recipe is that the oats are super creamy and delicious, but never stodgy or thick.
The Greens & Grain bowl this week is my upgraded version of a Mediterranean chicken salad situation: I'm slow-roasting some harissa-marinated chicken and putting that with some organic greens, cracked green olives, barrel-aged feta, pickled cherry peppers, and a bulgar-mint-parsley salad situation. That plus our dreamy tahini sauce and maybe some warm fluffy pita wedges, and I'm all set. I've noticed I have to get an extra Greens & Grains bowl every week to send with my wife to work on Monday, and this was made with her in mind, as she often requests a version of this dish at home.
The Sausage Ragu with Fresh Cavatelli Pasta is a delicious excuse to also put fresh Calabro Ricotta on my pasta, and you should too. This creamy counterpoint to the slightly spicy ragu is just wonderful. So is a little charred broccolini in the mix- and it's all in your kit, and comes together in the time it takes to boil water.
We weren't happy with the quality of the peas or snap peas last week- not sure what's going on with them, but until they improve they're off the list. If you want the best of Spring produce without having to put too much thought into it, an Early Spring Produce box is a great way to go. It will include salad greens, cooking greens, other veggies, and two types of fruit. We are excited about the champagne mangoes, Delta Queen asparagus, and German butterball potatoes we have this week, and we hope you like them, too.
