Street Corn Salad, Mojo-Marinated Pork Shoulder, Caribbean Red Beans

Feast all weekend: Grab this trimmed-up, beautifully marinated mojo pork shoulder roast, slow-cook it in your oven until you are dizzy with delight from the wonderful aromas filling your kitchen, and serve with some freshly steamed rice, our Caribbean-style Domingo Rojo Red Beans, and some roasted sweet plantains.
Our Mexican Street Corn Greens & Grains Bowl has fresh local corn that we shucked and flash-fried in olive oil on top of some organic farro with roasted red onions and jalapeno. We're serving that with a little chili crema, cilantro (can be left off upon request), and freshly sliced scallions. Great with any leftover mojo-marinated pork or chicken, one of our sous vide chicken breasts, or sauteed shrimp if you want to turn it from a hearty salad into a meal with protein.
